Baking with acid
Very easy experiment which shows how acid affects the process of baking.

vinegar 10%
4 cups
2 spoons
baking powder
baking soda
H2O
-------------------
first cup - vinegar + baking powder
second cup - H2O + baking powder
third cup - soda + H2O
fourth cup - soda + vinegar

Baking powder is a mixture of sodium bicarbonate, acid and others.
H2O activates the acid, which reacts with sodium bicarbonate causing carbon dioxide.
Vinegar is an acid so it reacts with sodium bicarbonate causing carbon dioxide.
Baking soda consists sodium hydroxide,when combined with acid, carbon dioxide is formed.
If we use baking soda as a source of carbon dioxide an acid must be used also - in baking.
